it would be nice if there was added a checkbox to select all folders in "Items
for Offline use" dialog

FYI.
If "All" is "All folders of the IMAP account", it's already implemented, although out side of the dialog.
 At "Keep messages for this account on this computer",
 Change Uncheckd => Checked : Change all folders of this account to offline-use=On
                              + change default of new folder to offline-use=On
 Change Checkd => Unchecked : Change all folders of this account to offline-use=Off
                              + change default of new folder to offline-use=Off
