I'm pretty sure this has been discussed before, but I can't quite remember what the reason not changing them was.
Summary: Hard-codec app name in overrides/appstrings.properties → Hard-coded app name in overrides/appstrings.properties

This file overrides dom/locales/en-US/chrome/appstrings.properties for Firefox specifically. This is intentional, see bug 305998.
