Open the options panel. Click on the "general" tab if not selected. Click on the "Choose" button for languages.

1. The list does not support typing in your own language tag (it does in plain Mozilla).
2. The list does not include any of the script-subtag-bearing tags (zh-Hans/zh-Hant, etc.)
