There is no keyboard shortcut for Bookmarks > Organize bookmarks.   I've used the System Preferences on OS X to associate CTRL-B to that action, but there should be a keyboard shortcut included for this by default.   I'm not sure if CTRL-B is available on Windows and Linux, but this would be my suggestion.  I don't really care what it is as long as it's not too hard to reach and requires a simple two-key combination.

Note bug 370456 provides for a keyboard shortcut (Shift-B resp. Accel-B).
But the 'Organize Bookmarks' in the 'Bookmarks' entry should also have an accelerator.

Uh, on trunk, I see keyboard shortcuts (on OSX and PC) for "Bookmark This Page", "Bookmark all Tabs" and "Organize Bookmarks"

Linux only?

Other menus have the proper underlines under some letters of their items.

It's Linux only now. Windows and Mac each have a keyboard shortcut here.

GTK would too, but Ctrl+Shift+B is eaten by GNOME (yay).
