With a current 1.8 tbird Nightly, Thunderbird is only called "Thunderbird" and not "Mozilla Thunderbird" like on Linux and Windows. It seems to be possible to add a vendor name, like VMware Fusion is called "VMware Fusion".

It says "Thunderbird" in the mac app menu (did that in 1.5 as well). In the about menuitem it says "About Mozilla Thunderbird" - I think that's one of the few (if only) places it says "Mozilla Thunderbird". I think it always have been like this.
