When a user joins a conference, or is invited into a chat, they're shown the chat history from before they joined. New lines that come up when the user is there show the correct time. The lines from before they joined are wrong.
It's behind by 8 hours, which to me should mean that the machine it's on knows the correct time, but thinks it's in GMT. Setting the Openfire server settings to GMT didn't make a difference, restarted the fastpath plugin. Perhaps the whole openfire software needs to be restarted? Ideally the root issue is fixed and the Openfire server settings are set to PST.
Sparks time is local time set to your machine, the fastpath time is the time on the server. So for me, fastpath is GMT-8 server time.

I'm being told the minutes are off as well.
I think a flag needs to be switched on this VM to sync time. When can I take the server down to make the change?
Any time that aren't our hours is technically fine, though we have some people helping out today. So long as we get a heads up in #sumo it should be fine.
The server was apparently rebooted already a couple days ago, and the time on the server is accurate now.

Lucy fixed the timezone config in OpenFire and I restarted that just now, and all seems good now. Was a combination of the two apparently.
