Apparently Zimbra supports the ability to see meeting rooms and "resources" using Caldav but it's not enabled for us. I'd like to be able to see meeting room schedules to see which are available as well as book them from iCal, using Caldav. Link in the URL field says kind of where this can be done, but not really.

Zimbra currently doesn't support this now. They will be opening up a Request For Enhancement for this. Will post the bug details once I have it.
Apparently the CalDav specification doesn't allow for this sort of stuff, so its a wontfix. Sorry ss.
