Seems the graphviz RPM package is missing a "/usr/bin/dot -c" call to initially configure the layout plugins after installation. Running that on each of the webservers seemed to cure the problem.

As a side note, it appears this was fixed back in September, and the fixed RPM never made it into the repo (rpmforge) for some reason. I've notified the repo maintainer.
