There should be a separate "Star" button available. In the right-click menu for messages, the Mark sub-menu includes Read, Star and Junk. Reproducible: Always Steps to Reproduce: 1. 2. 3.

It's possible to add that button to the toolbar, however I don't think it will become part of the default toolbar. Meaning you could still add the button from the toolbar customizer.

This is what I had expected. A "Star" button in the toolbar customizer which can be optionally added to the toolbar by the user.
If you install the CompactHeader add-on you get such a button for the mail toolbar (the one at the top) and the header pane toolbar. https://addons.mozilla.org/thunderbird/addon/compactheader/
