First thing I wanted to do when i got the beta was remove the new tab button. I doubt I'll be alone. Turns out you can't customize this by default, needs a userchrome hack: /* new and all tabs buttons */ .tabs-newtab-button, .tabs-container > stack { display: none !important; } sdwilsh has volunteered to whip up an extension to do this instead, probably best thing for us to link to (as we did with the url bar changes).
Monkey article. Re-open if we see enough demand.

Let's keep the extension request on the table though. Even if it's not an article, we should have something to link to in forums/livechat that isn't 15 steps to find and use userChrome.css.

Even if we don't tell them how to do it, I think we can reasonably assume that people will be asking this question. Whenever there's a change we always get lots of questions on how to revert. The new tab button used to be a customizable button. bug 457187 has lots of people asking about it already (including lots of dupes) and bug 347930 is planned (though not in time for 3.1) which will make the button movable again. IMO we should start release with the article up and take it down if it really isn't getting traffic. It really sucked in forums and live chat until we got decent articles up about changing the location bar.
There is a new tab button in the customize toolbar window in the latest 3.1 builds. (bug 456984) So if any users have it on the Navigation Toolbar, they won't lose it. And in the tab bar, the new tab button is beside the right-most tab (bug 457651). Let's see what the Beta 3 feedback is like before re-opening.
