Mac, linux: Default window background color should be white
On both Mac and Linux we expect the compose window background color to be white (white = paper, white =editable) rather than the dull gray it is now. Right now it does not look like this is an editible area, and most users will expect a new document to be white by default. FYI, Windows works OK as it takes the system setting for a window background as the default color.
keywording this nsbeta3 and rtm to go on the radar :-)
There is a pref in the Color Pref panel for this. The default is gray and should be white. This should just be a change to all.js or something similar.

I'm guessing that the only reason windows isn't broken is because this was tested with the "use windows colors" checkbox set.

The default background color in Composer is the system background color if the Use OS Colors checkbox is checked in the Preferences. Most Windows systems default to white so it appears as white in Composer. If you change the OS setting, it will also change in Composer. On Mac, the default background color is currently hard-coded to gray, so you'll get gray in Composer. I believe that Linux has an OS setting for background color (which happens to be gray). Composer is working as expected (as are the preferences). Resolving this bug as invalid. p.s. Please note that there *are* other bugs for changing the hard-coded value on Mac as well as the bug where "white" appears behind the text on Linux and Mac. Please don't reopen this bug for those issues.
