The preference for selecting whenever you want to show the e-mail address for someone who's already in your address book or not in the message header is a bit oddly worded.
It currently says:
"Show only display name for people in my address book"
Possible issues I can see:
* Show and display are synonyms
* It's hard to tell what will show if you turn it off
* It gives the impression to apply to the address book.

A slight expansion of my suggested solution <http://twitter.com/mpt/status/6970172268>:
In message headers, show the e-mail addresses of:
( ) Everyone
(*) People who aren’t in my address book
I think that's a lot more obvious, though I'm not 100% happy with it (it still feels a bit twisty).
As an aside, if you cut down on unnecessary headings for the other options, even this expanded interface for the option could fit in the main "Display" tab, instead of awkwardly in a "Display" section of a non-"Display" tab.
