My school provides me with 2 emails, one that is the general university @email.XXX.com and one that is for our department @XXX.email.XXX.com. However, the department email addresses have no dedicated inboxes of their own and forward everything to the university account. I've setup the department email as an identity under the university email.
Occasionally I'll want to send an email and have the From: field show up as the department email. Both the university and department emails are sent using the same SMTP sever. Now even though the From: field will say the department email address, the message received on the other end will have the SMTP username/email address, which is the university email. I also tested this and set the department email address to use a different SMTP server, and it uses that address as well in the From: field instead of the desired one.
Reproducible: Always
Steps to Reproduce:
1. Create an account.
2. Set it to use the SMTP server of a different account.
3. Send a message with the From: field set to the account name in 1.
Actual Results:
From: field on received email will show SMTP server account name.
Expected Results:
From: field should have showed the address selected when the message was composed.

This works for me, and has for as long as I can remember. Which SMTP servers did you try? If they're both a part of your university, they might have the same rules.

Both the university and department email I have attached to the same Google SMTP (Google Apps for Education aka Gmail Pro) whose login information is the university email.
I'll be creating a new profile soon but this wasn't a problem for me before as well.

SOLVED.
Gmail apparently decided to unannounced (even their help doesn't mention it) require you to verify yourself as the owner of other email addresses before you're allowed to have "From:" fields use those addresses.
I had to login to Gmail (technically my university email but everything is identical to Gmail). Settings->Accounts->Add another email address.
Status: UNCONFIRMED → RESOLVED
