The pref browser.taskbar.previews.enable will sometimes be reset after an update. So far I have not found any reproducable behaviour or a reason, but I set the pref several times already and it gets reset to the default value every now and then.
(I use the nightly build which will be updated daily.)

Can you please check if this happens for complete updates? Means, install a build from 2 days ago and run an update.
I've just tested that. It doesn't seem to necessarily happen with a complete update. At least it works with an update from version 20101103 to 20101107. I've checked the download size which seems to be a complete update (13MB).
It also does not happen with an update from yesterday to today's nightly build (1,9MB).

I will try to narrow the cause.
Not reproducable with the last Updates. I will keep an eye on it and report new problems when they happen.
This has happened to me on several occasions. Latest was after update to beta 8.
It's still reproducible with latest Firefox?
