I think some IMAP servers keep track of reply dates (as can be seen in the provider's web interface), but Thunderbird isn't recording those right now. Thus, it would imply to either collect this information (e.g., along with message IDs as is pending in bug 66274 for replies to a message) or to request it from the server if made available (wouldn't work for local mail).
