I'm running Fennic Native, today's birch nightly.

All UI is in English, except for the crash reporter, which displays German text, except for the labels next to the 2 checkboxes, which are not displayed.

I updated from XUL-Fennec, which had language auto-detection turned on IIRC.

I'm seeing the crash reporter all the time today, so I got to file a bug about this...

The missing strings was just fixed in bug 698816. I have no idea how you're seeing German through the XML layout file; it uses @string's which are only in en-US right now.

Can you attach a screenshot of what you see using a recent tinderbox-build?

The tinderbox build is much less crash-happy.
All strings are there.
And now the strings are in English.
