Looking over the list of font prefs in all.js, the choices are a bit of a hodge-podge. In some cases they need to be updated to cover better fonts available and in other cases they are really inconsistent with the underlying sans-serif/serif distinction. For example, the Greek locale uses Lucide Grande as the font for serif/sans-serif and monospace(!). So I suggest we review the list and tweak where necessary, using a combination of what makes sense for a given locale/platform, the quality of the font selected and font fallback considerations (e.g. choosing fonts that cover less frequently used codepoints within a script's Unicode block). I'm only suggesting tweaking the font.name.xxx and font.name-list values, not a complete overhaul of font prefs.
