i disagree it would be better, especially when multiple fields are changed at the same time. html bugmail utilises the full width of your email client, resulting in a significantly improved email.

I, too, find the changed fields nigh-unreadable in the plaintext emails I receive in gmail.

Yeah, forgot to mention. This is probably not demonstrated well in the default bugzilla theme, since it uses a monospace font. The assumption that every plaintext mail client uses a monospace font is entirely bogus.
