Apple's Mail.app mirrors Finder.app's behavior in that if one holds the OPTION (ALT) key down while clicking the expand/collapse arrow next to a folder, all subfolders are expanded/collapsed. Thunderbird does not do this, but it is useful, so adoption should be considered.

Here's a hypothetical example to illustrate. Let's say one has the following hierarchy:

*- Archive
   *- Finance
   |  *- Correspondence
   |  *- Statements
   |  *- Trade Confirmations
   *- Neighborhood Association
      *- Mailing List
      *- Official Business

Now imagine where we start off with all folders collapsed (I will use '+' to indicate collapsed, synonymous with a right-facing arrow, and I will use '-' to indicate expanded, synonymous with a down-facing arrow). What we should see is something like:

+ Archive

If I single-click to expand "Archive" I will see:

- Archive
  + Finance
  + Neighborhood Association

If I single-click to collapse "Archive" I will see:

+ Archive

Now if I option-single-click to expand "Archive" (and subfolders), I will see:

- Archive
  - Finance
      Correspondence
      Statements
      Trade Confirmations
  - Neighborhood Association
      Mailing List
      Official Business

Now, if I single-click to collapse "Archive", I will again see:

+ Archive

But note that the subfolders which are now hidden are still expanded. So if I single-click to expand "Archive", I will again see:

- Archive
  - Finance
      Correspondence
      Statements
      Trade Confirmations
  - Neighborhood Association
      Mailing List
      Official Business

Now, if I option-single-click to collapse "Archive" (and subfolders), I will see:

+ Archive

But now all of the subfolders have been collapsed, so if I single-click to expand "Archive", I will now see:

- Archive
  + Finance
  + Neighborhood Association

Hopefully this makes sense. Play around with Mail.app or Finder.app to see the behavior in action.

If this behavior is adopted, it should probably be adopted everywhere that hierarchies appear (e.g., File -> Subscribe...; Tools -> Account Settings... -> [Account] -> Synchronization & Storage -> Message Synchronizing -> Advanced...; etc.).
