During my first use of the email app, I added one email account. Now, I have no clue how I can add further accounts. I probably won't be the only one.

Hit the menu button in the upper left, then the gear to get to the settings UI.  There is an add account button below the list of existing accounts.  Accounts can be deleted if you click on the specific account you want to be rid of and look for the button on that page.

Is this in French too?  Maybe the button is not visible?

In terms of discoverability, it's not clear what we could easily do to make things more findable.  I'm not sure there's really an intuitive place for the settings button other than putting it in a similar place to where other apps put it, and I do believe we are doing that.

This is in French. The button is here now (and works) so I assume that it was also here on previous runs (unless it was somehow part of the symptoms of bug 824241).

I believe that the best way to make it more discoverable is to add some kind of information bubbles on first run. This is certainly beyond the scope of v1, though.
