What is the format of this demo? Will it be a packaged apps of screenshots similar to the payment one or something "live"?

Please find the latest demo script. It's a 3 pager, however I wanted to provide full context for how the promotion and payment areas will fit into the script. It's split into clearly defined sections, so should be easy to find what you're looking for.

Fyi - I've included director notes so you can see the intention of each demo stage.
