This is just another duplicate of a long-standing frequently requested bug (9 duplicates now):

Bug 167010 - Can't select text to copy email addresses in message header [sender, recipients, Ctrl+C]

Perhaps the problem is less that the text of email addresses isn't selectable, but rather that there's no way *at all* to copy more than one recipient of a received message, requiring workarounds like *Reply* to copy those. If we had at least something like in composition where recipients are itemized, but selectable via keyboard and mouse, that would be better.

Bug 752188 has nothing to do with this, that's about inability to use Ctrl+C on *selectable* read-only text inside the `Edit Contact` dialog.
I've just added a screenshot to clarify (Bug 752188 Comment 7), that's just a technical nit in the code due to the weird way that dialog is constructed.
