Steps to reproduce:
I noticed that FF suggests itself as an Android Assistant (see doc: https://developer.android.com/guide/topics/media-apps/interacting-with-assistant.html ). But I can't find any further information how FF can work as an assistant. Please clarify.

What you mean is an Assist App, which doesn't have anything to do with Google Assistant. It just means that you can set up Firefox as the app that responds to a long press of the home button via Settings -> Apps -> settings icon -> Default apps -> Assist & voice input -> Assist app.
Up to Firefox 57 this brings up the dedicated search activity, while in Firefox 58 and newer it currently doesn't do anything (since the search activity has been removed), but will open a new tab ready for keyboard input once bug 1413739 is resolved.
