How about we remove the HDD probes from probe dictionary until there's actually data on it?

I think there's some confusion here. The HDD/SDD type probe was implemented by :sefeng, originally in bug 1533861; it adds a .type
key to environment.system.hdd.{system, profile, binary}
for Windows clients.
The new probes are actually missing from the probe dictionary; the environment probes are not defined in a nice declarative manner, so they are not scraped from mozilla-central like the other probes represented in the probe dictionary. Instead, there's a reference inside the probe-dictionary repo: https://github.com/mozilla/probe-dictionary/blob/master/environment.json
Data for the probes you see in the probe dictionary are all being collected; there is no reason to remove anything from the probe dictionary. This bug is about publishing data for the new .type probe at https://data.firefox.com/.
