Did you use this add-on?
https://www.seamonkey-project.org/releases/seamonkey2.53.1/

WebRTC has been disabled by default. It needs an add-on to enable it per site. See the webrtc-permissions-ui-toggle add-on.

I used WebRTC Permissions UI Toggle 1.4.0 from TB add-ons repsitory. Due to https://github.com/IsaacSchemm/webrtc-permissions-ui-toggle/blob/master/install.rdf that should be the same version as I used.

The log shows only youtube errors. polymer v2 is not (yet) supported. SeaMonkey currently misses shadow dom and custom elements. No ETA. The crash might be fixed in todays version. No symbols so I can't be sure. The website makes is clear it supports only Chrome so I would not bother much with it. Webrtc is missing a load of fixes anyway and I would just use another browser for now. Chromium Edge should do the job on Windows.

No, it recommends chrome - more or less.
Visiting https://jitsi.riot.im/Stratum0Vortraege with Default User Agent tells: " ... try again with latest Version of Chrome and Firefox

Best to clear the error log before joining and then check only for errors during the visit. If it uses youtube and custom elements it won't work.

(Commenting on User Story)
I haven't tested for a long time. NO LONGER reproducible with installation of unofficial (by wg9s) De SeaMonkey 2.53.8 beta 1 pre Mozilla/5.0 (NT 6.1; Win64; x64; rv:60.0) Gecko/20100101 Firefox/60.0 Build 20210227220003 (Newly created User Profile, Default Classic Theme) on German WIN7 64bit
