Details
User Agent: Mozilla/5.0 (Macintosh; Intel Mac OS X 10.9; rv:78.0) Gecko/20100101 Firefox/78.0
Steps to reproduce:
I'm printing a message (mail, rss feed, ...)
Actual results:
with thunderbird 78 the job name changed to "Untitled"
Expected results:
In previous version the job name was generated from the subject of the message which
- made it easier to find a specific document in the print queue
- made is less likely to overwrite existing documents when printing to pdf
- the custom name made it easier to handle the resulting documents when printing to pdf, now one needs to open them to see what is inside

Sam, this works for me quite perfectly on Windows 10, 78.4.3 (64-bit), for email and rss messages, am seeing the subject as job name and title everywhere. Only for empty subject, job name will be empty, too.
Which version are you on?
Does problem occur after Help > restart with addons disabled?
Maybe MAC-only problem. Can we have someone checking this on MAC?

Ok. What's your exact version of TB (Help > About TB)?
Can you clear Error console (Cmd+Shift+J) before printing and check if there's any errors from printing?
