We need to add Thunderbird as a supported product in the collector so that we start collecting crash reports again.

I'll do this today. It's a one-line change. Then it'll get deployed to prod in the next prod deploy (probably next week).

Thanks again for this! I can turn submission back on on our side after this is deployed, right? Any other changes that were meant to happen in Socorro from eg bug 1744121 never happened?

Yes on both counts. Once this is deployed to prod, you can switch Thunderbird to submit to Socorro again. I never got to making the changes for bug #1744121; Thunderbird still shows up on Crash Stats and whatever data is left that hasn't expired due to the 6 month retention thing is still there.

This went to prod in bug #1763206 just now. Marking as FIXED.
I'm seeing Thunderbird crash reports coming in again.

I've verified that Thunderbird crash reports are being accepted and displayed.
Therefore, Thunderbird is now sending all crash reports to Socorro again as of 6pm PDT. https://crash-stats.thunderbird.net will also redirect the report view to https://crash-stats.mozilla.org for reports that were submitted after this time.
