I signed up to BMO with Github, assuming my email would stay private. Unfortunately, there is no setting in user settings to make it private.
There is some hiding of email address, e.g. I can't find my email when looking at my profile in a private window. However, I would like to hide this even for logged-in users.
Email address is leaked to non-logged-in users/bots/spammers when looking at bugs I've filed. Here is one of my bugs in GUI, email hidden unless logged in. The same bug in REST API shows reporter's email address.
Please make it so that email addresses can be hidden completely.
I feel this is a breach of the trust I put into Mozilla.
Thank you for the report.
There's some stalled work to address this that I'll duplicate this bug against.
Your report did highlight an issue with the GitHub workflow where we don't display the same set of information that we do when an account is created directly on Bugzilla; we'll fix that soon in Bug 1782314.

This bug is only a partial duplicate of https://bugzilla.mozilla.org/show_bug.cgi?id=1372631
Here I am asking not for a WARNING when creating a NEW account. I want to change/hide my email from all other users, not necessarily by choosing a unique username.
Additionally, this bugs points out that the REST API leaks email addresses, and is not locked behind a login.

What you're asking for is indeed bug 1372631.
