It seems that making animation shorthand supports animation-composition may be very tricky, so it's unlikely to include animation-composition into the shorthand for now, per spec issue: https://github.com/w3c/csswg-drafts/issues/6946. So I think it should be fine to enable this feature on Nightly without the support of shorthand.

Safari Technology Preview supports this only for longhand. Safari release version doesn't support this.
So I think Safari didn't ship this, but only enable this on their "NIghtly" version only.
