Currently, most Android apps including Google Chrome use AppCompat, which allows you to use the latest emojis even on older versions of the Android OS.
However, since Firefox uses its own rendering, AppCompat cannot be used, and the emojis that can be displayed still depend on the Android version.
It is expected that it will be difficult to use AppCompat on the Gecko engine, so I hope that you will be able to display the latest emoji using a unique method to deal with this problem.
For example, you can bundle the latest emoji fonts into the Firefox app and use them to render emojis, or if there are emojis that cannot be displayed, you can convert them and display them in a pseudo-way.
By the way, in the Windows version of Firefox, fonts that cannot be displayed with the default font (Segoe UI Emoji) are displayed with Twemoji Mozilla.
