These look like they're from the thunderbird glean migration in bug 1899602. A mirror of the metrics is here https://github.com/mozilla/releases-comm-central/blob/master/mail/metrics.yaml which hasn't been added to probe scraper. If this isn't resolved next week then we can follow up in that bug

thunderbird-desktop was added to probe scraper in https://github.com/mozilla/telemetry-airflow/pull/2059 and https://github.com/mozilla/probe-scraper/pull/790. There are some other issues described in bug 1913930 but this current bug should be resolved
