High Contrast should be disabled like before 130.0 when set to Never under Colours>Manage Colours
That setting should be for web content, not for the UI.
Did you update from 129 or from another version?
Is High Contrast indeed enabled on the system?
High contrast is enabled on the system.
As this is my daily driver computer it was probably on 129 as I keep Firefox updated automatically.

I suspected as much, plus it was set to Never as I use "Dark Background and Light Text" extension to color the page accordingly.
Doesn't explain why it suddenly changed the UI colors with this version though. 🤔

Can you try in Troubleshoot Mode to exclude it's caused by an extension?
https://support.mozilla.org/en-US/kb/troubleshoot-extensions-themes-to-fix-problems#w_start-firefox-in-troubleshoot-mode
Tried it and the only difference is the background theme being removed.

Not sure if Firefox::Theme is the right component to investigate this further, in case please move it.

This is I think the intended effect, per bug 1878919 / bug 1881851.
Note that the color dialog is about websites, not the browser UI...
