It'd be nice to have something similar (or better) to what the Android emulator in Android Studio has in order to emulate a pinch gesture.

We might have similar bugs or requests already filed, but it's true that it's missing from RDM, we should try to add it.

Note that on a laptop touchpad, a pinch gesture on the touchpad can be used to pinch-zoom the page in RDM.

However, this looks different to the page than a touchscreen pinch-zoom gesture (the page sees wheel events with the Control modifier set, rather than multi-touch events), so it may work for reproducing some bugs in RDM but not others.
