I tried the Apple Mail importer, just to see what state it's in. It imported nothing. I think we still have all the pieces we need, but it looks like the directory structure for Mail's data has changed.
Our code correctly found the directory at "/Users/geoff/Library/Mail", but it contains a directory named "V7" instead of "Mailboxes" which we look for. I took this line out and tried again using the UI to try other directories.
I did get it to find the right "something.mbox" directories, but they weren't imported. I think the structure has changed there too – it seems the actual .emlx files are deeper still.
At this point I gave up. This needs somebody who can compile on the Mac machine they're testing on, or with a lot of patience. But I think it should be straightforward if we can find the logic behind the structure, and if there's variations we'd have to account for.
And there's absolutely zero unit testing of the Apple Mail import, so that's helpful…

We should probably disable it in the meanwhile :-/

Bug 1933395 made nsImportMailboxDescriptor::GetFile() return
NS_ERROR_NOT_IMPLEMENTED, so the Apple Mail importer could not find any
mailboxes.

Look for mailboxes in the newest V<n> directory, treat directories with .mbox
children as accounts, and find .emlx files and sub-mailboxes nested inside .mbox
directories.
