This bug has been opened on Ubuntu and forwarded upstream to Epiphany, but the same problem is reproducible with Firefox 2.0.0.9 and Gran Paradiso alpha8, so I am forwarding it here.

A restart of the browser is currently required in order for the page renderer to
pick up new font settings, in particular, changes to the font smoothing and
hinting settings.

Reproducible: Always

Steps to Reproduce:
1. Open Firefox on GNOME and visit any page.
2. Go to System->Preferences->Appearance->Fonts and modify hinting, smoothing  and/or DPI preferences.
Actual Results:  
While the whole environment change according to the preferences, Firefox does only after a restart.

Expected Results:  
Firefox would change dynamically as the rest of the environment according to what the user has chosen.
