Knowing what size screens our users have would be really handy when it comes to designing UI. It'd also be good to know what size browser windows they use.

This is fine from a privacy perspective so long as this lands after the string change in bug 685373 (which covers hardware/usage attributes like this).

Do the UI designers already have a standard set of screen sizes they design for? What would information collected by these probes offer them above and beyond whatever criteria they use to choose their standard sizes?

We collect screen info in the Telemetry environment now, see system.gfx.monitors:
http://gecko.readthedocs.org/en/latest/toolkit/components/telemetry/telemetry/environment.html
If there are specific product/design/engineering questions that require window size information, lets take that to a new bug.
