The order of the fields in the email windows seems fixed (subject,
sender, (un)read, date, status ... etc) and neither can you
disable any of them.
It would be useful to be able to reorder/disable then since each email
user (me included!) considers different fields have different
importance.

The ability to reorder columns is bug 9656. You can hide or show certain
columns, via the columnpicker (the column far to the right, with the icon). If
that isn't obvious, feel free to file a bug in UI Design to improve its
visibility.
