Looking for some documentation on nsIInputStreamChannel, I could fill in some of the information, I'm not sure how to create a page for https://developer.mozilla.org/en/NsIInputStreamChannel however.

Your best bet is to copy an existing reference page and paste it in, then update it to be about nsIInputStream. See https://developer.mozilla.org/en-US/docs/Project:Writing_interface_reference_documentation for details and a link to an example, too.

The page itself should actually be at:

The URL where this should be documented changed to https://developer.mozilla.org/en-US/docs/Mozilla/Tech/XPCOM/Reference/Interface/nsIInputStreamChannel.
