I don't know about a safe mode. 
when I receive an e-mail the from address is also full of gibberish, below their name.  The people that send me the e-mails are not sending it. I have confirmed.

I don't see any gibberish. Everything you posted looks valid to me.

If what you really mean is "there are too many message headers displayed", then turn off "All Headers". Click the App Menu at the right, then View -> Headers -> Normal.
