Steps to reproduce:
After the update from Firefox 64.0.2 to 65.0, some text is rendered as if it were bold, including parts of the UI like the address bar. Downgrading to 64.0.2 solved the issue.
I've tried changing several settings in about:config, restarting after every change, but nothing proved satisfactory:
- gfx.text.disable-aa
- layout.css.osx-font-smoothing.enabled

Sounds as if this may be a dupe of Bug 1524250. In that bug Chris mentions "You can opt back into the lighter fonts in macOS Settings's "Use font smoothing". I did. :)"

The macOS font smoothing does not affect the bug (I have it enabled). Also, Safari 12 does render differently. I've uploaded a screenshot of how Safari renders it. It is consistent with how Chrome and Firefox 64 render it.
So whatever the intended behavior is, on my system (macOS 10.14.3) the latest Firefox broke rendering - Firefox 64 renders the same as other browsers, Firefox 65 renders some text (not all of it) as if it were bold.
