STR:
- In Nightly68, go to "about:config"
- Click on "Show all"
- Click on "edit" button next to an editable pref.
- Click (focus mouse pointer on) a different pref.
AR: Pref value stays in editable mode.
ER: Pref value goes from editable to non-editable mode
As an end-user, I should not accidentally update a pref value.

I'm not convinced that clicking away should cancel editing, since you may want to copy and paste a value from another part of the page, although I admit it's a rare case. You won't accidentally update the value anyways, because you need to change it first, then press Save to confirm the change. Clicking Edit on another preference will cancel the previous edit.
If you still think this is a feature work having, even if it wasn't in the original design, you may want to ask Markus either here or in bug 1533856 first, and reopen the bug if that's the case, considering that it's additional work for a project that doesn't have many resources anyways.
The ESC key is covered by bug 1522659.
