User Agent: Mozilla/5.0 (X11; Linux x86_64; rv:68.0) Gecko/20100101 Firefox/68.0
Steps to reproduce:
Assigned a message a Tag
Actual results:
The time frame varies from 1 second to a minute: the Tag is spontaneously removed.
Expected results:
The Tag should remain until I remove it.
This is a new "feature" of v68. Not an issue in earlier versions.

Version 68 has been out for several months with basically no major issues open at the current time https://mzl.la/2qPdfv6
Tag issues as you describe tend to be the result of interractions with the mail provider.
This is not a major issue. It is an annoyance.
The only thing that has changed is: Thunderbird. The previous version was 60.x. The local mail server (Communigate Pro v6.1.20) has not been updated in the last several months; there have been only minor changes or additions to filters, nothing involving tags.
It may indeed be an interaction with the server. If so, it is due to changes in TB.
I do not use tags much. An important exception is a notice that the Internet service has stopped; the message is tagged as Important and the color is red. No longer. As noted, the tag is quickly removed.

Please obtain a log capturing the activity - IMAP:5

The requested log.
A tag "2 Work" was set shortly after startup. I moved a couple of messages to another folder. I deleted a message. The tag setting was reset. I quit.

I'm sure this is a duplicate of bug 1596371. It also occurred with communigate pro server. Reporter Jim Moe, if you can set a tag for the last two built-in tags (4 To Do and 5 Later) and they stick with no problem, it will verify the problem as being the same. The problem only occurs for the first 3 built-in tags.
Today I just did a "try" build for win32 and win64 with the proposed fix for this problem for another user (Mikhail). I will do another for linux for Jim Moe so maybe he can try the fix, which is not yet released.
Jim, you can find the "try" build here containing the fix: https://treeherder.mozilla.org/#/jobs?repo=try-comm-central&collapsedPushes=525525&revision=f400d8343b99cf7ef3be36d4a339e99271ff838b
It is a patch to the latest tb 68 version. When the build is finished, you will see a bold green "B" next to "Linux x64 opt". When you click on the "B" you should see more information appear in a black bar about 1/2 way down the screen. Click on the "Job Detail" item in the black bar. You will see a long list of items but the important one for test on linux is "target.tar.bz2". You can download the file, expand it and within the resulting directory, run the thunderbird executable from a command line. It will just use your existing profile. Running this, you should not see a problem when setting the first 3 built-in tags when the communigate pro server is used. You are welcome to use this "try" version until the fix is released if you want. But you can go back to using the release tb at any time.
Anyhow, thanks for the log. It looks very similar to what was submitted in bug 1596371. I will mark this as a duplicate.
Yes, it is a duplicate.
I tagged a message with a tag greater than 3; it has been persistent.
