is there a way to make mozilla remember the Text Zoom - - - respectly to set the default value to something other than 100% (maybe a per-page setting)
No. Zooming is only temporary (and per window/tab), it will not be saved. Change the font-size (Preferences -> Appearance -> Fonts) if you want another default (for all pages). Per site zooming : bug 108391
