After the last update some days ago (nov. 2020) : I write a message, click on the button "attach" and Thunderbird stops to run. I have to leave and wait for a while. I have to try several times before I can send a message with an attache document.

Anne, that's unlikely to be a bug in TB. Pls try this:
- Help > Restart with addons disabled --> better now?
- Open the error console (Ctrl+shift+j), click dustbin icon to clear, try attaching: anything in error console?

Thanks Anne for the error console info!
At first glance, I see nothing which relates to attaching. Are you sure that you cleared the error console before attaching using the dustbin icon, so that these errors are exclusively from the attempt of attaching?
About the Thomas D. suggestion :
"Help > Restart with addons disabled --> better now?
Can you also reply to this question: "Better now?" = Does your problem still occur after "Help > Restart (TB) with addons addons disabled"?

Hi Thomas,
I restarted with addons disabled and it is the same problem.
About the error console :
when I click the Attach button, if the error occured (it's not every time), nothing new is written in the console and it became impossible to access it, all is "frozen", I can't select anay windows and I have to restart Thunderbirt using "forcer à quitter" (force quit).
The problem comes sometimes also with the download button, if I want to download attached documents.

We'd certainly get more reports if this was a Thunderbird bug on Mac.
- Which version of TB are you using? Help > About TB
- What about all these Nvidia messages in the error console?
- As a random thing, try to remove the checkmark for [ ]
Use hardware acceleration when available
in options, and report if problem still occurs

Dear Thomas,
1- The version of TB I'm usign is 78.5.0 (64 bits)
2 - I don't know exactly what Nvidia is. May be something related to websites running with Wordpress or Prestashop.
3 - I removed the checkmark (use hardaward accelaration..) without any change

I'm using TB 78.5.1 on a iMac running macOS 10.14.6.
Since a few weeks I observe a similar issue after clicking on the Attach button and in the following dialog window selecting the file to be attached.
After clicking on the Open button in the dialog window my computer freezes for two or three minutes.

Also reported in THUNDERBIRD crashing every time I upload item. However, I've never seen this. And no matching bug reports in the past 3 years https://mzl.la/2WHYjeg
If this is highly reproducible for someone, please find a regression range using https://mozilla.github.io/mozregression/ - it is simple enough for end users to navigate, and can use a test profile so your production is untouched.
EDIT: mozregression gui is known to not work on Big Sur. Instead, use the CLI https://mozilla.github.io/mozregression/documentation/usage.html

Does it also happen with beta?

It's a miracle, the issue has disappeared !! I'm still running macOS 10.14.6.
I just tested it in my two TB 78.7.0 profiles and it is gone. The same is true for my TB 86.0b2 profile.
It also stopped happening in Firefox (actually 85.0.2) where I encountered the same 3 or 4 minute system freezes when I tried to upload a screen shot on the German Thunderbird Mail DE forum.
