We can consider breaking this out to a separate bug, but I think one step here is to make the /Privacy index page a bit richer. Explain that we have three modes of ETP (Standard / Strict / Custom), which features are enabled in which modes, and then link out to the individual documentation for each individual feature.

Unarchiving was completed in https://github.com/mdn/content/pull/1897. I filed Bug 1701731 for follow-on work.
