Can’t add email account to Thunderbird (Mac)

Steps to reproduce:
Fresh Thunderbird installation. Adding email account.
Quitting and restarting Thunderbird.
Actual results:
Email account is gone, account manager reappears. Sometimes at once, sometimes after some minutes.
After adding the account again, new directories (*.default-release-1, *.default-release-2, *.default-release-3) are created.
I even deleted the whole ~/Library/Thunderbird/ directory. Same result.
MacBook Pro 2019, macOS 11.4, Thunderbird 78.11.0
Expected results:
Email account should be set permanently, existing email directories should be recognized on app start.

I'm guessing you are running Thunderbird from the download, and it isn't installed. Make sure it is installed as an application on the Mac.

Nope. It has been copied to the Application directory. I uninstalled and installed it several times. Behavior didn’t change.
My workaround until now: I installed the old Version 68.12.1 (instead of Version 78.11.0). It has no problem keeping the email accounts. After updating to 78.11.0 the email account is still available. It doesn’t work if I delete ~/Library/Thunderbird/ and use Version 78.11.0.

This doesn't mean that your email account is gone but Thunderbird creates a new profile at each startup and summons to set up an account.
This is very strange, I haven't seen this issue in any TB forum.

Do you have multiple prefs-x.js files in your profile folder(s) ?
I've treated the corrupt prefs.js file problem in forums at least 35 five times over the years. When this happens (power failure, computer crash, TB crash), TB renames the corrupt prefs.js file in prefs-1.js and creates an new prefs.js file which doesn't contain any account settings.
So TB opens like in a fresh installation:
all accounts have disappeared and TB asks to set up an account for an existent email address. This can be solved easily by replacing the new prefs.js file by the prefs.js file from a recent profile backup.
Your problem is different from the corrupt prefs.js file since TB creates a new profile on each startup. Try some more and verify if TB creates a *.default-release-4, *.default-release-5 ....etc folder in "Profiles".
Then try again after uninstalling your anti-virus software.
Does your Thunderbird icon look like the one in my screen shot ?
