Steps to reproduce:
I'm running Kubuntu 21.10 (Impish) using the Thunderbird from there.
The problems started with the update to v91.2.1 in Impish.
I get the same problems when starting up Thunderbird on a live-USB boot of Kubuntu, so it's nothing to do with any options I have set.
Actual results:
At 91.2.1 the drop-down menus for editing Calendar events (such as options for Repeat: and Reminder:) have light text on a light background, and are hence unreadable.
At 91.3.1 it gets worse.
Here the (left hand) sidebar in the Preferences menu and Add-ons manager are ALSO displayed with a light background (and light text!!) when I'm using the Dark Theme!!!
The drop-down menus are still totally wrong (and unreadable).
Expected results:
The foreground/background colours should reflect the theme, as they did until prior to version 91 (which probably means version 78 for Ubuntu).

The issue in 91.3.1 was bug 1741095 which is fixed in version 91.3.2.
I can't reproduce your Calendar issue using 91.3.2 on Fedora 34 Workstation, Gnome 40 desktop with the light Adwaita operating system theme and the Thunderbird Dark theme, or using the Fedora supplied 91.2.0.

I'm using KDE not Gnome.
So boot Kubuntu 21.10 from a live USB, run an update (to get to 91.3.2), start up Thunderbird, set the Dark Theme in Preferences and open Tools->Add-on and Themes.

I was thinking I was on 91.3.2, but it's still 91.3.1.
I'll wait to see whether 91.3.2+ also fixes the drop-down menus.

From bug `1741095:
You can temporarily fix this by entering the config editor and setting ui.systemUsesDarkTheme to 1.
This does work on my 91.3.1 to fix the left-hand panel oddity (odd that it's a number, not a boolean).
But it has no effect on my drop-down menus in Calendar.

I booted the Kubuntu 21.10 iso on a live USB, started up Thunderbird (91.1.2) there, added my calendar (need to click on the Calendar tab before any options to add/do anything for calendars shows up), set Dark Theme and viewed the same entry.
The same unreadable light-on-light drop-down menus appear.

Just to add that setting ui.systemUsesDarkTheme to 1 has no effect on these drop-down menus.
It was already being set in 91.2.1 when the Dark Theme was chosen, but the issue exists there.

- I booted Kubuntu 21.10 from a live USB.
- Started the Thunderbird 91.1.2 that came with it.
- Created an email account.
- Enabled the Home Calendar.
- Enabled the Thunderbird Dark theme in the Add-ons Manager.
- Yes, the calendar items are not visible.
- Updated to 91.3.1 and yes the calendar items are still missing and the left pane of the Add-ons Manager, Preferences, and Account Settings are light.
- Changed the Kubuntu theme to use Breeze Dark, and Thunderbird to use the System theme.
- Calendar, and other items look good, if you want to use that as a workaround until Kubuntu catches up to version 91.3.2.

Thanks for the suggestion, but that leaves everything in a Dark mode, which isn't what I want.
Also, I'm not convinced that 91.3.2 is going to fix the issue. That has fixed (reportedly) something which wasn't a problem at 91.2.1. So it might not fix something which was a problem at 91.2.1.

Indeed, I've just downloaded 91.3.2 from thunderbird.net, dropped it in place as /usr/lib/thunderbird and copied across Ubuntu's thunderbird.sh start-up script.
The problems with drop-down menus are still present.
So 91.3.2 does NOT fix the issue.

I can confirm that, using 91.3.2 with the Plasma theme, Thunderbird Dark theme on a Live USB of Kubuntu 21.10.
Can not reproduce using Thunderbird 91.3.2 on Fedora 34 Workstation, Gnome 40 desktop, Adwaita (default) operating system theme and the Thunderbird Dark theme.

Nobody said it was fixed. Bug 1741095 is about something entirely unrelated.
This bug won't be fixed until assigned to someone, a patch is applied, a new version is built, and the report is resolved as fixed.

FYI:
I tried Thunderbird 102 (from https://github.com/srevinsaju/Thunderbird-AppImage/releases/tag/stable) and it seems to be OK.
So I suppose I'll just have to wait for Ubuntu to up the Rev now....
