I have four mail accounts - all different mail accounts with different email addresses.
One account has two identities - not the main default account, but it does use the smtp server of the main account.
So in addition to tests below - I also changed that other account to use a different smtp for a test purpose and it has no effect on results.

My main 'default' mail account 'Inbox' :
Right click on a received email (must not be an email sent by me) in thread pane/message list and select 'Edit as new message'.
Result:
'Write' window opens and all fields correctly filled.
However, I also see the yellow banner at the bottom which says:
"A unique identity matching the 'From' address was not found. The message will be sent using the current 'From' field and settings from identity My name <email address>.'

Note: the received email was not 'From' me, so there would not be a unique identity for the original received email 'From' field.

This occured on the 'Inbox' and any folder I created for storage and only on that main mail account. It does not occur on anything in Drafts, Templates or Sent, but I'm sending or have sent those emails.

The account that does have two identities is not effected nor is any other account effected at this point.
Account has it's own smtp for email address set up correctly.

I do not have any Pop account set up to use Global Inbox.

If I select same account Inbox and select same received email so it displays in 'Message Pane', there is no problem and the 'Reply etc buttons appear. Click on 'Reply' or any button and all opens ok - no yellow banner. If use the right click and select any option -Reply/Reply all/Forward etc with the exception of 'Edit as new message', all opens ok.

This occurs regardless of whether I select to use HTML or Plain TExt when composing.
This occurs regardless of whether original email was composed using HTML or Plain Text.

Tested in Safe Mode with same results.

Test:
Set another pop account as default the one with two identities.
This account had no problem before I set it up as default.
Now the new default account 'Inbox' (and any folder I created) is displaying same issue when using 'Edit as new message'. This did not occur until I had set the account as default.
The main account - not set as default for test - still displays same problem.

Swap back the default setting:
Test on pop account (Now not default) the one with two identities.
Problem is continues being experienced in that account.

Any account I set up as default, will suddenly start to have this problem, even after I have reset default to the main account.

So after performing the tests on choosing different 'set as default' - all my accounts 'Inbox' and any folder I have created now have the issue.
It also occurs in imap gmail folders that I did not create but have subscribed to see eg: starred.

It occurs regardless of whether POP or IMAP.

There is one exception and this occurs in all accounts in all folders:
Any email I have sent to myself from one account to another - right click - select 'Edit as new Message' and it opens ok - no yellow banner. But only for emails I have sent to myself and those accounts exist as mail accounts in Thunderbird.

Recap:
Issue noticed in Inbox and any folder I created in the account set as default.
No other accounts effected.

Change the account set up as default and immediatey that account now displays same problem. That account will then continue to display same problem even when it is no longer set as default.

Does not effect any email created by myself or sent to myself from another mail account that is an account in Thunderbird, regardless of what folder it is stored in.

'Edit as new message':
It would seem as if the original received email 'From' field is checked to see if a mail identity has been created in Thunderbird.
Obviously, in most instances, this is not the case, so you get the yellow banner which serves no purpose, but it is irritating and looks like a warning as if something is really wrong.

BUT....If you are wanting to 'Edit as a new Message' , then you would expect the 'From' to use your own mail account email address and not the 'From' of the original email. You would also expect all other fields eg: TO, Cc to be blank because it is editing as a NEW message.

Those other fields eg: TO, Cc, Bcc are also completed which is wrong. The original email was sent TO me, so you would not expect the NEW message to enter ME in a TO field.

The 'Edit as new message' option is not operating as you would expect.
You have to delete everything in all the TO, Cc Bcc fields.
You have to ignore what looks like a warning in a yellow banner.
Neither of the above should be occuring.
