If you are on Windows...
- Please start Windows in safe mode with networking enabled https://support.microsoft.com/en-us/help/12376/windows-10-start-your-pc-in-safe-mode
- Still in Windows safe mode, start Thunderbird in Troubleshoot mode https://support.mozilla.org/en-US/kb/troubleshoot-mode-thunderbird
Does problem go away?

There are two patches coming.
To determine which issue it is related to - does the mail have many attachments?

I am using Windows 7 still. Do not want to upgrade to 10 or 11.
I'll try safe mode with networking.
That's for letting me know about the patches. I never had this issue until the last update.
No email attachments, but it does seems to be when their is HTML content

The current key bug for this type of performance issue is bug 1851871 which should be fixed next week in 115.3.0.
You can post your results here next week.
