mitmproxy is currently on 10.x.x https://github.com/mitmproxy/mitmproxy/releases/tag/10.1.5

Because there always tends to be minor/bug version upgrades in the latest. rather than chasing that we could just go with the N-1 major version? (so we would currently go from 8 -> 9)

However if we instead implement Bug 1841098 it should be much easier to upgrade by using revisions, and picking up minor/bug version updates should be trivial (similar to how we do it for browsertime)
